For the first day of the 7 day raw vegan challenge, breakfast was a Coconut & Macadamia Nut Smoothie. It was beyond amazing. Below you’ll find the recipe. I didn’t toast the coconut shreds as the recipe says to, and I did without the maca powder, stevia, superfood boost and maqui berry powder. I did add pea protein to it. Give it a try! It was delicious.
